650g New Zealand pork steaks, cut into thin strips

1 tsp dried chilli flakes
1 tsp Chinese 5 spice
1 tsp white pepper
½ tsp black pepper

To make the chilli garlic sauce, combine all of the ingredients in a bowl and set aside.
To prepare the pork, combine cornflour, salt, chilli flakes, Chinese five spice, white pepper and black pepper in a large snap-lock bag. Add the pork and toss until lightly coated.
Half fill a medium-sized saucepan with vegetable oil and heat to about 180℃.
Deep-fry the pork in small batches until golden brown and crunchy.
Serve with chilli-garlic sauce and mayonnaise.
