2 pork loin steaks
½ c flour
Salt and pepper

1 c breadcrumbs
½ c grated parmesan
1/4 tsp dried parsley
2 tsp mixed herbs

Place a zip lock bag, piece of cling film or baking paper on a chopping board.
Place the steak on top and then fold another layer of the plastic or baking paper on top
Using a tenderiser or rolling pin, hit the steak until it is approximately 1cm thick
In a shallow dish, combine the flour and salt and pepper
Place the eggs in a another shallow bowl and whisk lightly with the milk
Place the breadcrumbs, parmesan and herbs in a third shallow dish
Coat meat with flour, dip in egg and then coat with crumb mixture
Let stand for 5 mins
In a large fry pan, heat the oil until it starts to shimmer.
Place the pork in the oil. Cook until golden brown, approximately 4 minutes.
Turn and cook the same way on the other side, until golden brown.
