4 New Zealand Pork Schnitzels
1 cup of flour

1 cup panko crumbs
½ cup grated parmesan
50g butter

In a shallow dish, combine the flour and salt and pepper
Place the eggs in a another shallow bowl and whisk lightly
Place the breadcrumbs and parmesan in a third shallow dish
Coat meat with flour, dip in egg and then coat with crumb mixture
Let stand for 5 mins
In a large fry pan, heat the olice oil until it starts to shimmer. Add the butter and as it starts to melt, place the pork on top of the melting butter. Cook until golden brown. Turn and cook the same way on the other side, until golden brown.
Preheat air fryer to 200° C. Place schnitzel in air fryer basket and lightly spray with cooking oil.
Air fry for 5 minutes before flipping the meat over. Spray the remaining side and cook for a further 4 - 5 minutes. Rest for 2 – 3 minutes before serving.
Remove from the fry pan to a paper towel to remove any excess oil.
Serve with lemon.
This recipe takes schnitzel to a whole new level with the addition of parmesan. Paired with a salad or steamed vegetables, this is a tasty light meal.
