Boston butt
Despite what you might think, this cut comes from the upper part of the shoulder from the front leg. Popular with low and slow BBQ enthusiasts this cut is also ideal for long slow roasting, stews and braises.
Boston butt is the most common cut used for pulled pork, a staple of barbecue in the southern United States. Cook it low and slow, and then pour your favourite quality barbecue sauce over it, tear it apart, and devour on slider buns with coleslaw.
