Pad Thai pork salad

Simple and speedy, if you’re trying to find a midweek salad the whole family will love, then this is it.

350g NZ pork fillet, sliced

1 Tbsp sesame oil

150g rice noodles

2 tsp peanut oil

2 tsp chilli flakes

4 eggs, beaten

1 carrot, julienned

3 spring onions, sliced

½ cabbage, shredded

1 c bean sprouts, trimmed

1 bunch coriander, leaves picked

½ c chopped roasted peanuts,

sliced red chilli, lime wedges, to serve

DRESSING

2 Tbsp each soy sauce, lime juice

1 Tbsp each brown sugar, fish sauce, tamarind purée

Ingredients

Cook the pork

In a bowl, toss NZ Pork with sesame oil. In a wok, stir-fry for 3-4 mins. Set aside.

Prepare the noodles

Soak noodles. Drain and rinse.

Make the dressing

In a jug, whisk all ingredients together.

Construct the salad

In the wok, heat oil on high. Stir-fry chilli for a few seconds.

Add eggs, stirring for 1-2 minutes.

Add carrot and onion, stir-frying for 1 minute. Return NZ Pork to wok with noodles and dressing.

Toss well. Remove from heat.

Toss cabbage, sprouts and coriander through.

Serve with peanuts, chilli and lime wedges.
