Line a large shallow roasting tray with baking paper.
Place all the ingredients, except sweet marjoram, in a large bowl and toss to combine.
Place in the roasting tray in a single layer and place in the oven. Roast for about 40 minutes, turning once.
Sprinkle with the chopped sweet marjoram or parsley before serving.
