CUT
Rolled shoulder
A boneless rolled shoulder is ample and tasty, ideal for slow roasting or braising and very convenient to slice up at the end. With the inter-muscular fats this is a very juicy cut that will stay nice and tender.
If a whole bone-in shoulder is too big for your family, try a boned and rolled New Zealand pork shoulder with a layer of skin for delicious crackling.
