CUT
Rolled leg
Pork from the hind leg that has had the bone removed. Generally faster to cook than bone-in, can be roasted as it is or sliced into steaks and pan fried.
A boned and rolled leg makes a premium roasting joint full of tasty meaty flavours. While pork legs are traditionally a roasting cut, given the right treatment they can work in a range of other recipes.
