This taco mince recipe hits all the requirements for midweek meals - quick to make, minimal ingredients, and the beans make the meat go further making this a very affordable dish. Note, you can leave the jalapenos to the side if there are members of your family who don't like too much spice.
Shredded cabbage or lettuce with avocado and tomatoes are the classics. But you can always mix it up. Some of our other favourites are:
- Capsicum
- Corn
- Red onion
- Cucumber
For a simple tomato salsa mix diced tomatoes, red onion, your favourite herbs, lemon juice and olive oil together with a little salt and pepper
For a fruity alternative, swap the tomato for mango or pineapple. This can be an absolute master stroke on Taco night.
Bringing a bit of crunch and tang to the taco, a simple pickle might just become your next favourite taco topper.
To create these, take 2 cups of white vinegar, add to a pan with 2 cups of water, 1/3 cup of sugar and 2 Tbsp of salt. Heat till the sugar and salt has dissolved (about 1 min), leave it to cool then add 2 thinly sliced red onions and store in a jar. They'll be ready in about an hour and will keep in the fridge for 2 weeks.
This is really down to personal preference but a selection of hot sauces, a creamy guacamole, or a chipotle mayo (make your own by adding chipotle to mayonnaise a little at a time till you get your desired heat) can be a perfect addition.
It's not a traditional taco topper but grated cheese is a fan favourite. If you want to mix it up we love a smoky cheese to accompany our tacos.
