Incredibly easy using a hooded BBQ.

Method

  1. Carefully run your fingers under the skin of the 100% New Zealand cooked on the bone ham and remove outside layer.
  2. Place on a rack in a deep oven tray.
  3. Using a sharpe knife cut the ham fat layer into a diamond pattern and pierce with a whole clove in each corner.
  4. Adhere cranberries to centre of diamonds using a toothpick.
  5. Mix together the sauce and mustard and pour/brush over the ham.
  6. Preheat BBQ to 200°C.  Place ham in centre of preheated hooded BBQ and pour 2 cups of hot water into the oven tray.  Allow BBQ to return to temperature.
  7. Turn off the inside burners and cook for 1 hour 45 minutes.

To serve

  1. Serve with fancy breads, mustard butter and a green and cranberry salad.
  2. For mustard butter simply soften the butter and stir in some mustard.
  3. Add a handful of dried cranberries to the tossed salad.

Ingredients

  • 100% New Zealand cooked half ham on the bone
  • 2 tablespoons whole cloves
  • 2 tablespoons dried cranberries
  • 1 cup cranberry sauce (or plum)
  • 2 tablespoons prepared mustard
